It does not get much more touristy than this... but there's not a lot to do around Shannon Airport (flying home the next morning), and the banquet dinner was a lot of fun. After dinner, it was off to the almost 400 year-old Durty Nelly's pub for many silly sing-alongs, and several pints.
Very nice B&B, a few miles down the road past the castle.
